Ingredients:
  • olive oil cooking spray
  • 500g chorizo
  • 117.50 gm sour cream
  • 42.00 gm lemon juice
  • 23.40 gm wholegrain mustard
  • 6 sheets mountain bread
  • 100g rocket leaves
Instructions:
  • Lightly coat a non-stick frying pan with oil and warm over medium heat. Sear chorizo for 2 to 3 minutes per side until golden. Then, transfer to a paper towel-lined plate to cool.
  • In a bowl, mix chorizo, sour cream, lemon juice, and mustard. Spread the mixture on a sheet of bread. Add rocket leaves on top. Roll the bread tightly to enclose the filling. Repeat with the rest of the bread sheets, rocket, and chorizo mixture. Cut the wraps in half crossways, secure with baking paper and string, then tightly wrap in plastic wrap.
