Whip up a flavorful chorizo salad in just 17 minutes, paired with savory blue cheese toasts.
Ingredients:
  • 200g chorizo, sliced
  • 200g olive sourdough bread, thinly sliced
  • 100g soft blue cheese
  • 20g (1/4 cup) finely grated parmesan
  • 3 baby cos lettuces, cut into wedges
  • 1 small bunch watercress, sprigs picked, rinsed
  • 200g red seedless grapes, halved
  • 41.60 gm buttermilk
  • 42.40 gm Greek Lemon Dressing
Instructions:
  • Heat a frying pan over medium-high heat, then cook the chorizo, stirring occasionally, for 2-3 minutes until crispy. Drain on a paper towel.
  • Preheat the oven grill on high. Place sourdough slices on a baking tray and grill each side for 1-2 minutes. Mix blue cheese and parmesan in a bowl, then spread over the toasts. Grill for an additional 1-2 minutes until the cheese is slightly melted.
  • Plate the lettuce, watercress, grapes, and chorizo evenly onto 4 serving plates. Place the cheese toasts on top. Mix the buttermilk and lemon dressing in a jug, then drizzle it over the salads. Season to taste and enjoy!
