Ingredients:
  • 400.00 gm arborio rice
  • 1 onion, finely diced
  • 2 chorizo sausages, sliced
  • 250.00 ml peas
  • 5-1530.00 gm chicken style liquid stock, hot
  • 120.00 ml parmesan cheese
  • Salt & pepper, to taste
Instructions:
  • In a saucepan over medium heat, heat 1 tablespoon of oil and pan fry the chorizo sausage until golden. Remove sausage from the pan and set aside.
  • Lower the heat and sauté the onion in the pan for 2 minutes.
  • Fry rice slowly for 2 minutes, stirring often.
  • Gradually pour in one cup of savory stock at a time, stirring continuously until each addition is fully absorbed before adding more. Keep adding stock and stirring until the rice reaches a tender consistency, around 25-30 minutes.
  • Combine the sausage and peas with the final cup of stock and gently mix together.
  • Finally, incorporate parmesan cheese according to your preference.
