Christa's Peach Pecan Scones

Flaky scones with sweet peaches and crunchy pecans, ideal for brunch or a delightful tea/coffee break.
Ingredients:
  • 2 cups all-purpose flour
  • 0.33333334326744 cup white sugar
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 0.5 teaspoon ground cinnamon
  • 0.5 cup cold unsalted butter
  • 0.5 cup heavy whipping cream
  • 2 eggs
  • 0.5 cup diced canned peaches
  • 0.25 cup chopped pecans
  • 1 egg
  • 2 tablespoons water
  • 1 teaspoon raw sugar, or to taste
Instructions:
  • Heat your oven to a toasty 400 degrees F (200 degrees C) and prepare a baking sheet by lining it with parchment paper.
  • Combine the flour, white sugar, baking powder, salt, and cinnamon in a bowl. Incorporate the butter until pea-sized pieces form.
  • Combine heavy cream and 2 eggs in a small bowl, whisk well. Add this mixture to the flour-butter blend. Gently fold in peaches and pecans until just incorporated.
  • Transfer the dough onto a floured surface and shape it into a 1/2-inch thick round disc. Cut it into 8 wedges and place them on the baking sheet.
  • In a small bowl, combine 1 egg and water, whisking until smooth. Brush mixture over wedges and sprinkle with raw sugar.
  • Bake until beautifully golden, 20-25 minutes in the preheated oven.
