Christmas cake pops

Tempting Chocolate Cake Pops, perfect for gifting!
Ingredients:
  • 125g butter, softened
  • 135.00 gm (155g, firmly packed) brown sugar
  • 150g self-raising flour
  • 30g cocoa powder
  • 100g cream cheese, softened
  • 150g icing sugar mixture
  • 375g pkt milk chocolate melts
  • 9.20 gm vegetable oil
  • 100g white chocolate melts
  • Silver cachous, to decorate
Instructions:
  • Start by preheating your oven to 180°C. Grease and line the base of a round 20cm cake pan. Use an electric mixer to beat the butter and sugar until pale and creamy. Add the eggs one at a time, beating well after each addition. Stir in the flour and cocoa powder until just combined. Pour the batter into the pan, smooth the surface, and bake for 35-40 minutes until a skewer inserted in the center comes out clean. Allow the cake to cool completely on a wire rack.
  • Crumble cake into fine crumbs using a food processor and place into a bowl.
  • Combine the cream cheese and icing sugar in a food processor until smooth. Mix in the cake crumbs until fully incorporated.
  • Prepare an oven tray lined with baking paper. Shape the cake mixture into tablespoon-sized balls and arrange them on the tray. Cover with plastic wrap and chill in the fridge for 4 hours or until set.
  • In a heatproof bowl set over a saucepan of simmering water, melt the milk chocolate melts, stirring with a metal spoon until smooth. Stir in the vegetable oil until well combined.
  • Dip one lollipop stick in chocolate, insert it into a ball, and place it back on the tray. Repeat with the remaining balls. Allow to set for 5 minutes.
  • Coat one cake ball with melted chocolate, gently tap off excess chocolate, then stand it upright in a polystyrene block. Repeat with the rest of the cake balls and chocolate. Let them set for 30 minutes.
  • Melt white chocolate in a bowl over simmering water, stirring until smooth. Let it cool for 5 minutes. Drizzle melted chocolate over each cake pop, sprinkle with silver cachous, and place back on polystyrene to set.
