Snowmen cake pops

Celebrate winter with adorable snowman cakes.
Ingredients:
  • 40.00 ml bought vanilla frosting
  • 375g pkt white chocolate melts
  • 3 sour fruit straps
  • 200g butter
  • 370g caster sugar
  • 4.40 gm vanilla extract
  • 4 eggs
  • 405g self-raising flour
  • 250ml milk
Instructions:
  • Preheat your oven to 180C and prepare a 10 x 20cm loaf pan by greasing and lining the base and two long sides with baking paper.
  • In a medium bowl, use an electric mixer to cream together the butter, sugar, and vanilla until pale and creamy. Add the eggs one at a time, beating well after each addition. Gradually mix in the flour and milk in alternating batches until just combined.
  • Transfer the mixture into the pan and use a palette knife or the back of a spoon to create a smooth surface. Bake in the preheated oven for 1 hour or until a skewer inserted in the center comes out clean. Let it rest for 5 minutes before transferring to a wire rack to cool completely.
  • Trim the cake crusts with a serrated knife. Break the cake into small pieces and pulse in a food processor until fine crumbs form. Combine the cake crumbs with vanilla frosting in a bowl.
  • Prepare a baking tray lined with parchment paper. Shape two-thirds of the cake mixture into tablespoon-sized balls and place them on the tray. Form the remaining cake mixture into teaspoon-sized balls and place them on the tray alongside the larger ones. Create approximately 15 large balls and 15 small balls in total. Cover the tray loosely with plastic wrap and chill in the refrigerator for 1 hour, or until the balls are firm.
  • Melt white chocolate in a heatproof bowl set over simmering water, stirring with a metal spoon until smooth.
  • Coat the tip of a small cake ball in the smooth melted chocolate and position it on a bigger cake ball. Repeat this step with the remaining balls. Allow to sit for 5 minutes to firm up.
  • Take a lollypop stick and dip one end in chocolate, then gently insert it into the bottom of the larger cake ball. Place it back on the tray. Repeat this process with the rest of the cake balls.
  • Dip each cake pop into melted chocolate, ensuring it is fully coated. Tap lightly on the bowl to remove any excess chocolate. Place the cake pop in the polystyrene to dry upright. Repeat with the rest of the cake pops. Let them sit for 30 minutes to firm up.
  • Cut the sour straps into 3mm-wide strips using kitchen scissors. Wrap them around the neck of the snowmen and secure with a small dab of melted chocolate. Use a black edible pen to draw on faces (or use chocolate gel as an alternative). Insert tiny sticks for arms or use licorice straps.
