Snowman Chocolate Icebox Cake

Festive Snowman Chocolate Icebox Cake: Easy, kid-friendly holiday dessert with chocolate cookies, whipped cream, and candy decorations. Just chill and enjoy!
Ingredients:
  • 4 cups heavy whipping cream
  • 1/4 cup sugar
  • 3 (9-ounce) packages chocolate wafer cookies (I like Nabisco Chocolate Wafers)
  • Candy for decorations, such as peppermint sticks, Dots, mini-marshmallows, licorice sticks, Junior Mints, and pretzel logs
Instructions:
  • Prepare parchment guides: Cut one 6-inch circle and one 8-inch circle out of baker’s parchment. Arrange them neatly on a platter, stacking the smaller circle on top of the larger one.
  • Prepare whipped cream: Use a chilled mixer bowl and beaters to whip together cream, sugar, and vanilla until soft peaks form. Exercise caution not to overmix. Add a dollop of whipped cream under each parchment paper circle on your platter to secure them in place.
  • Create cookie stacks by spreading a generous teaspoon of whipped cream on each cookie. Stack 4 to 5 cookies together and place them upright on the edge of a circle. Continue stacking cookies around the circle and in the middle until fully covered. Repeat to assemble a second circle.
  • Frost the cake with the remaining whipped cream, using a spatula to create the snowman/woman/person shape on the tops and sides of the circles.
  • Allow the cake to cool in the refrigerator for a minimum of 4 hours or overnight.
  • Top the cake with assorted candies just before serving, especially if they are prone to softening or bleeding color into the whipped cream.
