Snowman Coconut Cake

Indulge in a heavenly coconut-covered cake, topped with a delightful assortment of candies.
Ingredients:
  • 1 box Betty Crocker™ Super Moist™ White Cake Mix
  • Water, vegetable oil and egg whites called for on cake mix box
  • 2 candy canes, unwrapped
  • 2 flat-bottom ice-cream cones
  • Vanilla-flavored candy coating (almond bark), melted
  • 1 tub (16 oz) Betty Crocker™ Rich & Creamy Vanilla Frosting
  • 1 bag (7 oz) coconut (about 2 2/3 cups)
  • 5 large black gumdrops
  • 1 large orange gumdrop
  • 7 small black gumdrops
  • 1 roll Betty Crocker™ Fruit by the Foot™ chewy fruit snack (any red flavor)
  • 2 Oreo chocolate creme sandwich cookies
  • Black shoestring licorice
  • 2 pretzel rods
Instructions:
  • Preheat oven to 350°F (325°F for dark or nonstick pans). Prepare and bake cake mix according to package instructions for two 8- or 9-inch round pans. Allow to cool.
  • Line a 18x10-inch tray or cardboard with foil. Attach a candy cane to each cone using melted candy coating to make ice skates; let them set. Place cake rounds with sides touching on the tray, frost with frosting, and sprinkle with coconut, pressing gently to adhere.
  • For the snowman's face, use big black gumdrops for the eyes and buttons, a large orange gumdrop for the nose, and small black gumdrops for the mouth. Create a scarf using a fruit snack roll. Assemble earmuffs with a cookie on each side of the head, secured with shoestring licorice. Position pretzel rods as arms and ice cream cones as skates. Store with a loose cover.
