Gingerbread men cake pops

Make adorable gingerbread men for special events.
Ingredients:
  • 583g packet chocolate fudge cake mix
  • 60ml frosting
  • Icing sugar mixture, to dust
  • 300g milk chocolate melts
  • 65g butter, softened
  • 55g brown sugar
  • 60ml golden syrup
  • 1 small egg yolk
  • 190g plain flour
  • 5.00 gm ground ginger
  • 1.25 gm ground cinnamon
  • 1/4 tsp ground cloves
  • 150g icing sugar
  • 1 eggwhite
Instructions:
  • Preheat your oven to 180C. Grease and line the base of a 20cm round cake pan with baking paper for easy removal.
  • Prepare and bake the chocolate cake according to the instructions on the packet. Once baked, let it rest for 10 minutes before transferring it onto a wire rack to cool fully.
  • Crumble the cake into pieces in a food processor until fine crumbs form. Transfer to a bowl and mix in the chocolate frosting until well combined.
  • Prepare a baking tray with parchment paper. Sprinkle icing sugar mixture on a clean work surface. Shape the mixture into a 2cm-thick disc. Use a 3cm gingerbread man pastry cutter to cut out discs from the cake mixture and place them on the lined tray, reshaping any leftover cake mixture. Cover loosely with plastic wrap and refrigerate for 1 hour until firm.
  • Preheat your oven to 180°C and prepare an oven tray with baking paper. In a medium bowl, use an electric mixer to blend together the butter, sugar, and golden syrup until light and creamy. Mix in the egg yolk until just combined. Stir in the flour, ginger, cinnamon, and cloves until almost combined, then knead the dough with your hands until smooth.
  • Roll out dough on a lightly floured surface to a 3mm-thick disc. Use the mini gingerbread man pastry cutter to create shapes and place them on the lined tray. Bake for 8-10 minutes in the oven until lightly golden. Let cool after removing from oven.
  • For the royal icing, put the sifted icing sugar in a small bowl. Slowly mix in a portion of the egg white at a time, stirring well after each addition until a thick paste forms (the icing should hold its shape when piped). Transfer the icing to a piping bag with a no.2 plain nozzle. Pipe icing around the outline of each gingerbread man for decoration. Let it set before serving.
  • Melt the milk chocolate melts in a heatproof bowl set over simmering water, stirring with a metal spoon until smooth.
  • Take a lollypop stick and dip it in chocolate before inserting it into the bottom of a cake ball. Place it back on the tray and repeat for the rest of the cake balls.
  • Carefully submerge each cake pop into the luscious melted chocolate, ensuring a delicious coating. Lightly tap the side of the bowl to let any extra chocolate drip off. Place back on the tray and crown with a cute gingerbread man while the chocolate is still velvety. Keep going until all cake pops, chocolate, and gingerbread men are happily paired together. Allow them to rest for 30 minutes to solidify.
