Kid-friendly gingerbread men for decorating and gifting during the holidays.
Ingredients:
  • 150g butter, chopped
  • 90.00 gm firmly packed dark brown sugar
  • 178.75 gm honey
  • 2.50 gm bicarbonate of soda, sifted
  • 10.00 gm ground ginger, sifted
  • 2.50 gm mixed spice, sifted
  • 2.00 gm baking powder, sifted
  • 750.00 ml plain flour, sifted
  • Milk chocolate bits, to decorate
  • 1 eggwhite
  • 187.50 gm pure icing sugar, sifted
  • 2.65 gm lemon juice
Instructions:
  • In a saucepan over medium heat, combine butter, sugar, and honey. Cook and stir for 3 minutes until the sugar dissolves. Let it come to a boil, then remove from heat. Mix in bicarbonate of soda and transfer to a large heatproof bowl to cool.
  • Mix in egg, ginger, mixed spice, baking powder, and flour until thoroughly combined. Divide the dough in half and shape each half into discs. Cover with plastic wrap and refrigerate for 1 hour, or until firm.
  • 1. Preheat the oven to 180°C/160°C fan-forced. Grease 3 baking trays and line them with baking paper. 2. Roll out one dough disc between 2 sheets of baking paper until it is 3mm thick. 3. Use a 7cm gingerbread man cutter to cut shapes from the dough, remembering to re-roll any dough scraps. 4. Place the cut shapes on the prepared trays, making sure they are 2cm apart. 5. Repeat the process with the remaining pastry disc.
  • Bake one tray at a time for 8 minutes or until barely firm to the touch. Allow to rest on the trays for 5 minutes, then move to a wire rack to cool completely.
  • Prepare icing: Whisk egg white in a bowl until foamy using a fork. Slowly mix in icing sugar until well combined. Add lemon juice and stir. Transfer icing to a zip-top bag, cut off a corner. Use icing to decorate gingerbread men with milk chocolate pieces. Allow to set for 20 minutes. Enjoy!
