Spread holiday cheer with homemade baked treats for Christmas gifts.
Ingredients:
  • 125g salted butter, softened
  • 118.80 gm brown sugar
  • 84.38 gm maple syrup
  • 625.00 ml plain flour
  • 1.25 gm bicarbonate of soda
  • 10.00 gm ground ginger
  • 5.00 gm Ground Cinnamon
  • 190.00 gm white chocolate melts
  • Silver cachous, to decorate
Instructions:
  • With an electric mixer, whip together butter and sugar until fluffy. Incorporate maple syrup and egg, continue beating until well combined.
  • Sift flour, bicarbonate of soda, ginger, and cinnamon over butter mixture. Use a wooden spoon to stir until a soft dough forms. Transfer dough onto a lightly floured surface, knead gently until smooth, shape into a disc, wrap in plastic wrap, and refrigerate for 1 hour until firm.
  • 1. Preheat the oven to 180°C/160°C fan-forced. 2. Line 3 baking trays with baking paper. 3. Roll out the dough between 2 sheets of baking paper until 5mm thick. 4. Use a 6.5cm-long, 7cm-wide gingerbread man cutter to cut shapes from the dough. 5. Re-roll the dough scraps and continue cutting until you have a total of 30 gingerbread men. 6. Place the gingerbread men 2cm apart on the prepared trays.
  • Bake one tray at a time for 20 to 25 minutes until just firm when touched. Allow to rest on trays for 5 minutes, then move to a wire rack to cool completely.
  • In a microwave-safe bowl, heat the melts on medium-high for 1 to 2 minutes, stirring every 30 seconds until smooth. Transfer the mixture to a small snap-lock bag, snip off one corner, and use it to pipe faces and buttons onto the gingerbread men. Decorate with cachous and let it set.
