Delightful gingerbread treats, perfect for baking and enjoying!
Ingredients:
  • 125g unsalted butter, softened
  • 100g brown sugar
  • 115g golden syrup
  • 450g plain flour
  • 10.00 gm ground ginger
  • 2.50 gm mixed spice
  • 2.50 gm bicarbonate of soda
  • 150g icing sugar
  • Silver cachous, to decorate
Instructions:
  • Preheat your oven to 180°C and line 2 large baking trays. In a large bowl, use electric beaters to mix butter and sugar until thick. Add syrup and yolk, then gently fold in flour, ginger, spice, and soda with a spoon until you have a smooth dough. Shape the dough into a disc, wrap it in plastic, and chill for 30 minutes.
  • Allow dough to come to room temperature, then divide it into 2 equal parts. Roll out each piece between sheets of baking paper to a thickness of 5mm. Use a gingerbread man cutter, such as a 7cm and a 12cm one, to cut out shapes. Place the shapes on baking trays, ensuring they are spaced out (you may need to bake in multiple batches). Bake for 10 minutes or until golden brown. While the biscuits are still warm, use a skewer to quickly create 5mm holes at the top for threading ribbon. Allow the biscuits to cool completely on a wire rack.
  • Combine icing sugar with 2-3 teaspoons of warm water until a thick icing forms. Place in a piping bag with a small plain nozzle or a snap-lock bag to pipe. Pipe 3 small dots down each biscuit, press in cachous, and thread ribbon through holes. Store in an airtight container for up to 2 weeks.
