Christmas carbonara

Upgrade your classic carbonara with mushrooms and your choice of pasta for a delicious twist on this simple supper dish.
Ingredients:
  • 400 g tagliatelle
  • 150 g mushrooms
  • 1 clove of garlic
  • 1 tablespoon olive oil
  • 50 g Parmesan cheese plus extra to serve
  • 3 sprigs of fresh flat-leaf parsley
  • 6 fresh chives
  • 2 large free-range egg yolks
  • 100 g crème fraîche
  • 80 g cooked ham
Instructions:
  • Boil the tagliatelle in salted water according to package directions. Saute sliced mushrooms and finely chopped garlic in oil until softened. Combine grated Parmesan, parsley, chives, egg yolks, crème fraîche, and black pepper. Add fried mushrooms and shredded ham, mix well. Drain pasta, saving a cup of cooking water, then return pasta to pan. Pour sauce over pasta, stir to coat. Add cooking water as needed to adjust consistency. Serve with extra Parmesan if desired.
