Festive Spinach & Cheese Crêpes with zesty Marinara - a perfect twist for a Christmas meal!
Ingredients:
  • 4 eggs
  • 2.25 cups milk
  • 0.25 cup melted butter
  • 1 tablespoon vegetable oil, or more as needed
  • 1 (10 ounce) package frozen chopped spinach - thawed, drained, and squeezed dry
  • 1 (15 ounce) container ricotta cheese
  • 1 (3 ounce) package cream cheese, softened
  • 0.5 cup grated Parmesan cheese
  • 0.25 cup chopped fresh parsley
  • 3 tablespoons chopped green onion
  • 1 tablespoon onion powder
  • 1 teaspoon dried oregano
  • 2 eggs, lightly beaten
  • 2 cups prepared marinara sauce, or as needed
  • 1 cup shredded mozzarella cheese, or to taste
Instructions:
  • In a bowl, whisk together 4 eggs and 1/4 teaspoon salt. Gradually whisk in flour and milk alternately until a smooth batter forms. Stir in melted butter and refrigerate for at least 1 hour before using.
  • Place vegetable oil in a small bowl. Heat a small skillet over medium heat, then brush with vegetable oil using a pastry brush. Pour in about 1/4 cup of batter to coat the bottom of the skillet. Swirl to spread the batter evenly. Cook until the crêpe turns lightly golden brown on one side; flip and cook until the other side has small brown spots. Continue with remaining batter, brushing the skillet with oil as necessary to prevent sticking. Stack cooked crêpes between layers of waxed paper.
  • Preheat the oven to a toasty 350 degrees F (175 degrees C).
  • Gently combine spinach, ricotta cheese, cream cheese, Parmesan cheese, parsley, green onion, onion powder, oregano, 1/2 teaspoon salt, and 2 eggs in a bowl until the filling is well mixed.
  • Start by smoothing 1 cup of marinara sauce at the bottom of a 9x13-inch baking dish. Lay down a crêpe on your work surface, spoon approximately 3 tablespoons of filling down the center of the crêpe, adjusting the amount as necessary. Roll the crêpe over the filling and place it in the prepared baking dish with the sauce. Repeat this process with the rest of the crêpes and filling, arranging them in the baking dish. Cover the filled crêpes with the rest of the marinara sauce and top with a sprinkle of mozzarella cheese before baking.
  • Bake in the hot oven until the mozzarella cheese is bubbly, melted, and slightly browned, for 20 to 30 minutes.
