Transform Christmas pudding into rich, decadent ice cream. Delicious!
Ingredients:
  • 300ml milk
  • 600ml thickened cream
  • 6 egg yolks
  • 110g caster sugar
  • 500g Christmas pudding, crumbled
Instructions:
  • In a saucepan over medium heat, heat milk and 300ml cream together. In a separate bowl, whisk egg yolks and sugar until thick and pale. Once the cream mixture starts to bubble around the edges, slowly pour it into the yolk mixture while whisking constantly. Transfer the mixture back to the saucepan over low heat. Stir with a wooden spoon for 3-4 minutes until slightly thickened and smooth. Remove from heat and let it cool.
  • Whip the remaining 300ml of cream to soft peaks. Gently combine the whipped cream and crumbled pudding with the cooled custard. Chill the mixture until cold. Process in an ice cream machine following the manufacturer's directions, or freeze in a shallow container for 2 hours until the edges are frozen. Beat the partially frozen mixture with electric beaters, return to the container, and refreeze, repeating 2 to 3 times.
  • Place the mixture into a container and freeze until firm, approximately 4 hours.
