Create festive ice cream sandwiches with Christmas pudding and vanilla ice cream for a delightful crunch!
Ingredients:
  • 560.00 gm 97% fat-free vanilla ice-cream
  • 375.00 ml Christmas pudding crumbs (see note)
  • 20.00 ml Kahlua liqueur or strong black espresso coffee
  • 20 natural ice-cream wafers
Instructions:
  • Place a 6cm deep, 9cm x 19cm loaf pan with baking paper, leaving 2cm of paper hanging over both long ends for easy removal later.
  • Scoop the ice cream into a large bowl and let it sit for 10 minutes until it slightly softens without melting.
  • In a small bowl, mix the pudding crumbs and liqueur until well combined. Stir the pudding crumb mixture into the ice cream, then transfer the mixture into a loaf pan. Smooth the surface, cover with plastic wrap and foil, and freeze overnight.
  • Remove the loaf from the pan, then slice it into ten 2cm-thick slices. Make ice cream sandwiches by placing 1 ice cream slice between 2 wafers. Repeat with the remaining ice cream slices and wafers. Serve and enjoy!
