Indulge in luxurious banana pudding ice cream with ripe bananas, cookie crumbles, and velvety vanilla custard - a refreshing summer delight.
Ingredients:
  • 1.5 cups half-and-half
  • 0.5 cup packed light brown sugar
  • 0.5 cup white sugar
  • 1 pinch salt
  • 2 large eggs, beaten
  • 1 cup heavy whipping cream
  • 2 medium very ripe bananas, mashed
  • 1 cup crushed vanilla wafers
Instructions:
  • In a saucepan set over medium-low heat, mix together the half-and-half, both sugars, and salt. Stir and cook until the sugars are completely dissolved, approximately 5 minutes.
  • Transfer half of the hot mixture to a large bowl. Whisk in the eggs until well combined. Pour the mixture back into the saucepan and stir in the cream.
  • Stir over gentle heat until thickened and coats the back of a spoon, about 5 to 10 minutes. Remove from the heat and mix in the vanilla.
  • Strain the cream mixture through a fine mesh sieve into a bowl and let it cool to room temperature.
  • Gently mix mashed bananas into the chilled cream mixture, then transfer it to an ice cream maker and freeze following the manufacturer's guidelines. Add crushed wafers to the ice cream during the final 5 to 10 minutes of freezing.
