Irresistible and comforting banana malt pudding ready in under an hour. Guaranteed to disappear quickly!
Ingredients:
  • 75g brown sugar
  • 225g self-raising flour
  • 125ml milk
  • 60g unsalted butter, melted
  • 2 Free Range Eggs
  • 2 ripe bananas, mashed
  • 140g pkt Maltesers, chopped
  • 185ml rice malt syrup
  • 50g unsalted butter, melted, extra
  • 375ml water
  • Icing sugar, to dust
  • Vanilla ice cream, to serve
  • Rice malt syrup, extra, to drizzle
Instructions:
  • Preheat the oven to 180°C and grease a 6-cup (1.5L) baking dish. In a large bowl, mix together sugar, flour, milk, butter, eggs, and banana. Gently fold in the Maltesers until evenly distributed. Transfer the batter into the greased dish.
  • In a large jug, combine rice malt syrup, additional butter, and water, whisking until smooth. Gently pour the mixture over the pudding in the dish using the back of a large metal spoon. Bake for 40-45 minutes or until the top is set. Let it cool for 15 minutes before serving.
  • Sprinkle pudding with powdered sugar. Enjoy with a side of ice cream and a drizzle of extra rice malt syrup.
