Ingredients:
  • 2 medium ripe bananas
  • 150.00 gm wholemeal self-raising flour
  • 40.00 gm caster sugar
  • 128.75 gm milk
  • 250.00 ml vanilla yoghurt
  • 20g butter, melted
  • 3 passionfruit, halved
Instructions:
  • In a bowl, mash 1 banana until you have 1/3 cup of mashed banana. In a separate bowl, combine flour and sugar, then make a well in the center. In a jug, whisk together milk, egg, 1/2 cup yogurt, and the mashed banana. Pour the milk mixture into the flour mixture and whisk until smooth. Let the batter stand for 10 minutes.
  • Preheat a large non-stick frying pan over medium heat and brush with melted butter. Pour 1/4 cup of batter into the pan and spread to form a 1cm-thick round. Cook for 2-3 minutes until bubbles appear, then flip and cook for another 2-3 minutes until done. Transfer to a plate and cover loosely with foil to keep warm. Repeat with the remaining batter to make a total of 8 pancakes, brushing the pan with butter between batches.
  • Slice the last banana thinly. Arrange pancakes on plates. Add the rest of the yogurt and banana slices on top. Drizzle with passionfruit pulp. Serve.
