Indulge in deliciously sweet and fluffy banana pancakes infused with cinnamon and vanilla, perfect for a cozy weekend breakfast.
Ingredients:
  • 2 cups (250g) all-purpose flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 1/4 cups ripe mashed bananas (3 small or 2 large bananas)
  • 2 large eggs
  • 1 cup buttermilk
  • 1/3 cup whole milk
  • 1/4 cup vegetable or canola oil
  • Cooking spray
Instructions:
  • Whisk together flour, sugar, baking powder, baking soda, cinnamon, and salt in a medium bowl until fully combined.
  • In a large bowl, blend together mashed bananas and eggs. Stir in buttermilk, whole milk, oil, and vanilla extract until well mixed.
  • Combine the dry ingredients with the wet ingredients and whisk until just smooth. Some small lumps are okay; avoid overmixing.
  • To make the pancakes, preheat a large non-stick skillet or griddle over medium-low heat and spray with cooking spray. Place 1/3 cup of batter onto the skillet, making 2 to 4 pancakes without touching edges. Cook for about 3 minutes until bubbles form and edges set. Flip and cook for another 2 minutes until golden and cooked through. Transfer to a serving plate and repeat with remaining batter, greasing the pan as needed.
  • Enjoy: Serve the warm pancakes with butter, maple syrup, and banana slices. For later, store any leftovers in a sealed container in the freezer for up to 3 months.
