Indulge in weekend bliss with fluffy American pancakes and caramelized bananas.
Ingredients:
  • 3 large free-range eggs
  • 115 g plain flour
  • 1 heaped teaspoon baking powder
  • 140 ml milk
  • 2 knobs butter
  • 3 tablespoons caster sugar
  • 4 bananas
  • crème fraîche to serve
Instructions:
  • First, separate the eggs, placing the whites in one bowl and the yolks in another. Combine plain flour, baking powder, and milk with the egg yolks and mix until a smooth, thick batter forms. Whisk the whites with salt until stiff peaks form. Gently fold the whites into the batter. Heat a non-stick frying pan over moderate heat. Pour some batter into the pan and fry until golden and firm, then flip the pancake. In a separate pan over low heat, melt butter and sugar into a caramel sauce for about 3 minutes. Peel and cut bananas lengthways, add to the pan, and cook until golden. Serve them on the pancakes with a dollop of crème fraîche. Adjust cooking time based on banana ripeness.
