Ingredients:
  • 2 teaspoons baking powder
  • 0.5 cup butter, at room temperature
  • 3 eggs, room temperature
  • 1 teaspoon vanilla extract
  • 0.25 cup milk
  • 2 large bananas, chopped
  • 0.66666668653488 cup butter, at room temperature
  • 2.25 cups confectioners' sugar
  • 2 tablespoons heavy cream
  • 4 drops yellow food coloring, or as desired
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and prepare a 12-cup muffin tin by greasing or lining with paper liners.
  • Combine flour, baking powder, and salt in a bowl and set aside. Cream butter and sugar until fluffy. Add eggs one at a time, blending well after each addition. Mix in vanilla with the last egg. Alternate adding flour mixture and milk, mixing until just combined. Gently fold in chopped bananas. Pour batter into prepared cups.
  • Bake in the preheated oven for about 20 minutes, or until a toothpick inserted in the center comes out clean. Let cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
  • Prepare the buttercream by whipping 2/3 cup of butter in a bowl until smooth and glossy. Mix in the vanilla and confectioners' sugar until no dry lumps remain, then add the cream and food coloring. Beat on high speed until the buttercream is light and fluffy. Frost the cooled cupcakes with the buttercream.
