Banana Pudding Cupcakes

Banana-vanilla pudding-filled cupcakes, topped with whipped cream and crushed wafers for a decadent treat.
Ingredients:
  • 24 vanilla wafers (such as Nilla®)
  • 1 (18.25 ounce) package vanilla cake mix (such as Duncan Hines®)
  • 1 cup water
  • 3 eggs
  • 0.33333334326744 cup vegetable oil
  • 1 cup mashed ripe bananas
  • 1.6666667461395 cups crushed vanilla wafers (such as Nilla®), divided
  • 1 cup vanilla pudding
  • 0.5 cup thinly sliced ripe banana
  • 1 cup sweetened whipped cream, or more to taste
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) and get your 2 muffin tins ready with cupcake liners.
  • Place a vanilla wafer flat-side down in each cupcake liner.
  • Combine vanilla cake mix, water, eggs, and vegetable oil in a large bowl. Blend with an electric mixer on low speed until moistened (about 30 seconds), then switch to medium speed and beat until smooth (about 2 minutes). Gently fold in mashed bananas and 1 cup of crushed wafers. Spoon batter into prepared cake tins.
  • Bake in the preheated oven for 18-20 minutes until a toothpick inserted in the center comes out clean. Allow cupcakes to cool on a wire rack for about 30 minutes.
  • Mix together luscious vanilla pudding with freshly sliced bananas in a small bowl.
  • Hollow out the center of each cooled cupcake. Fill the holes with pudding mixture, top with a generous dollop of whipped cream, and sprinkle with the remaining crushed vanilla wafers.
