Transform overripe bananas into a sweet and moist sugar-free banana bread with warm cinnamon and vanilla. Substitute half the white flour with wholemeal for extra tenderness, and add nuts or sugar-free chocolate chips for a delicious touch. Ingredients:
  • 4 very ripe bananas
  • 113.75 gm olive oil
  • 64.38 gm milk
  • 1 tsp vanilla bean paste
  • 2.50 gm ground cinnamon
  • 250.00 ml wholemeal flour
  • 250.00 ml plain flour
  • 4.00 gm baking powder
  • 2.50 gm Bicarbonate Soda
  • Pinch salt
Instructions:
  • Preheat the oven to 160C (140C fan-forced). Grease and line a 11.5cm x 22cm loaf pan with baking paper.
  • In a large bowl, mash the bananas with a fork until smooth. Add eggs, oil, milk, and vanilla, then stir until well combined. Sift in the flours, cinnamon, baking powder, bicarbonate of soda, and salt over the banana mixture, then stir until fully combined. Spoon the batter into the prepared pan and level the top with a spatula. Bake for 1 hour and 10 minutes, or until a skewer inserted in the center comes out clean. Let it stand in the pan for 5 minutes before transferring to a wire rack to cool.
