Roasted banana & cinnamon ice cream

Irresistible frozen treat that's a breeze to whip up - a perfect blend of frozen yogurt and ice cream.
Ingredients:
  • 5 ripe bananas
  • 2 oranges
  • 4 tablespoons runny honey
  • 3 teaspoons ground cinnamon
  • 300 ml milk
  • 250 g fat-free natural yoghurt
  • dark chocolate (70%)
Instructions:
  • 1. Preheat the oven to 170ºC/gas 3. Peel and arrange the bananas in a baking dish. Grate the zest of an orange and set aside. Squeeze the juice of 1½ oranges over the bananas, then drizzle with honey and sprinkle 2 teaspoons of cinnamon. Roast for about 20 minutes until golden and tender. Let cool. 2. Transfer bananas to a blender, add milk, yogurt, remaining orange juice, a handful of zest, sea salt, and remaining cinnamon. Blend until smooth. 3. Churn in an ice-cream machine. Alternatively, freeze the mixture for about 3 hours, whisking every hour. 4. Serve the ice cream topped with orange zest and grated dark chocolate.
