Maple-Roasted Banana Snack Cake

Satisfy your sweet tooth with cake infused with maple-roasted bananas.
Ingredients:
  • 4 ripe bananas, chopped
  • 1/2 cup real maple syrup
  • 1/2 cup unsalted butter, cut into tablespoons, softened
  • 1/2 teaspoon vanilla
  • 2 cups cake flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 to 3/4 cup granulated sugar
  • 1/4 cup buttermilk
  • 2 1/2 to 3 cups powdered sugar
  • 1 cup butter, softened
  • 2 tablespoons real maple syrup
  • 1/2 teaspoon ground cinnamon
  • Dash salt
  • Additional ground cinnamon
Instructions:
  • Preheat the oven to 400°F. Cover an 8-inch square (2-quart) glass baking dish with foil and grease a 13x9-inch (3-quart) glass baking dish with cooking spray, then line the bottom with parchment paper.
  • In an 8-inch baking dish, assemble Roasted Banana ingredients. Roast for 30 minutes, tossing 2 or 3 times while roasting. Take out of the oven; then lower the oven temperature to 350°F. Mash the bananas and let them cool slightly before using.
  • Combine cake flour, baking soda, baking powder, 1 teaspoon cinnamon, and 1/2 teaspoon salt in a medium bowl.
  • In a large bowl, whisk together the remaining Cake ingredients until well blended. Stir in the roasted bananas until combined. Fold in the dry ingredients until no flour patches remain. Pour the batter into a 13x9-inch baking dish, spreading evenly.
  • Bake for 20 to 25 minutes until a knife inserted in the center comes out clean and the top is golden. Allow to cool completely, for at least 1 hour.
  • Whisk Frosting ingredients in a medium bowl until smooth, adjusting consistency with powdered sugar or maple syrup as needed. Transfer the frosting to a piping bag and create small mounds all over the cake. Finish with a sprinkle of extra cinnamon.
