Maple roasted rhubarb and strawberries - a spectacular combination!
Ingredients:
  • 1 bunch rhubarb
  • 250g strawberries
  • 60ml maple syrup
Instructions:
  • Preheat your oven to a toasty 200°C. Trim the rhubarb into 5cm lengths and prep the strawberries by washing, hulling, and halving them. Combine both in a roasting pan.
  • Pour the rich maple syrup over the vibrant rhubarb and strawberries, tossing gently to ensure they are coated evenly. Bake for 15-20 minutes, or until they are tender yet maintain their shape beautifully.
  • Gently spoon the roasted rhubarb and strawberries over a bed of warm store-bought rice custard and lightly drizzle with some of the pan juices. Enjoy!
