Roasted Banana Whiskey Ice Cream

Indulgent bourbon-infused ice cream with butter-roasted bananas, made with a rich and creamy custard.
Ingredients:
  • 1 cup very ripe bananas
  • 0.5 teaspoon butter, melted
  • 1.25 cups white sugar
  • 0.25 cup brown sugar
  • 1 tablespoon good quality bourbon whiskey (such as Maker's Mark®)
  • 2 cups heavy cream
Instructions:
  • Peel ripe bananas, chop into 2-3 chunks, and freeze until completely solid.
  • Preheat your oven to 350 degrees F (175 degrees C), then place the frozen banana pieces in a baking dish and drizzle them with melted butter.
  • Roast the bananas in the oven until golden for about 20 minutes. Mash them in a bowl, then refrigerate to chill.
  • Whisk egg, white sugar, brown sugar, and bourbon whiskey in a bowl until smooth. Heat cream in a saucepan until simmering. Gradually whisk 1 cup of hot cream into egg mixture. Return mixture to saucepan. Cook over medium-low heat until thickened. Stir in mashed bananas. Chill 4 hours to overnight.
  • Transfer the ice cream base to an ice cream maker and freeze following the manufacturer's guidelines. Once done, spoon the soft ice cream into a container with a lid and freeze until firm, for at least 1 hour.
