Year-round festive Christmas pudding scroll, irresistibly delicious.
Ingredients:
  • 1000.00 ml plain flour, sifted
  • 70.95 gm caster sugar
  • 2 x 7g sachets dry yeast
  • 300ml warm milk, plus extra to glaze
  • 100g unsalted butter, melted
  • 1 free range egg, lightly beaten
  • 410g jar fruit mince
  • 62.50 ml flaked almonds
  • 62.50 ml apricot jam
Instructions:
  • Prepare a 30cm x 25cm baking pan by greasing and lining it.
  • In a large bowl, mix together flour, sugar, and yeast. In a separate bowl, combine milk, butter, and egg. Pour the wet ingredients over the dry ones and mix until well combined.
  • Transfer the dough to a lightly floured surface and knead for 5-10 minutes until it becomes smooth and elastic. Place the dough in a lightly oiled bowl, cover it with a clean tea towel, and let it sit in a warm place for 30 minutes until it doubles in size.
  • Deflate dough, then knead briefly and shape into a 35cm x 30cm rectangle. Spread fruit mince evenly. Roll up dough tightly, slice into 2cm pieces, and place in pan. Cover with a towel and let rest in a warm spot for 30 mins.
  • Preheat oven to 200C or 180C fan. Lightly brush scrolls with extra milk and sprinkle almonds on top. Bake for 20-25 mins until scrolls sound hollow when tapped.
  • Microwave jam for 20 seconds until smooth. Brush warm scrolls with jam to glaze. Serve warm or at room temperature.
