Ingredients:
  • 125g butter, softened
  • 110g caster sugar
  • 1 Free Range Egg
  • 225g plain flour
  • 1 tsp vanilla bean paste
  • 1 tsp finely grated orange rind
  • 1 tsp almond extract
Instructions:
  • Beat together butter, sugar, and egg using an electric mixer until just combined in a large bowl. Add flour, vanilla, orange rind, and almond extract. Beat until mixture just comes together.
  • Transfer the dough to a lightly floured surface and knead gently until smooth. Divide the dough into 2 portions and form them into discs. Cover with plastic wrap and refrigerate for 30 minutes to chill.
  • Preheat the oven to 180°C. Roll out the dough on a lightly floured surface until it's 3mm thick. Use star-shaped cutters to cut out shapes from the dough, then place them on lined baking trays. Bake for 10-12 minutes, or until they turn light golden. Let them cool on the trays.
