Create a festive Christmas tree charcuterie board with kale or herbs as the tree base. Customize with various greens, cold cuts, nuts, and veggies. Let your creativity shine and enjoy the process of designing your edible masterpiece.
Ingredients:
  • 1/2 bunch curly-leaf kale (See note)
  • 1 slice Cheddar cheese
  • 1/2 pound sliced deli roast turkey
  • 1/2 pound sliced deli ham
  • 1/2 pound sliced Colby-Jack cheese
  • 1/2 pound sliced pepper Jack cheese
  • 16 dried apricots, or more, as needed
  • 16 pecan halves, or more, as needed
  • 5 snack-sized, wax-wrapped cheese, such as Babybel
  • 4 to 6 prosciutto-wrapped cheese snacks
  • 2 cups seeded crackers, or crackers of choice
  • 1 cup baby sweet gherkins, optional
Instructions:
  • Cut each kale leaf in half along the center vein to create two halves.
  • Place the greens on a large cutting board or platter in the shape of a tree, gradually widening the "branches" in each row with small gaps in between.
  • Using a cookie cutter, shape the Cheddar slice into a star and place it at the tree's top. Cut the leftover trimmings into ornament shapes and set aside.
  • Cut the turkey, ham, and cheese slices into 2-inch squares. Arrange the turkey squares in a fan shape across the bottom of the platter, followed by a row of ham, then a row of each type of cheese, and finish with a final row of ham. Adjust the number of rows based on the size and shape of your platter.
  • Place the dried apricots in a curved line on the "tree" to create a garland effect, then add the pecan halves in a curved line to form a second garland.
  • Adorn the tree with the wax-wrapped snack cheese "ornaments" and the reserved Cheddar cuts.
  • Create the tree trunk using prosciutto-wrapped cheese snacks.
  • Arrange seeded crackers at the base of the "tree" to symbolize presents. Accompany with extra crackers and baby gherkins for serving.
