Christmas tree cupcakes recipe

Save time this Christmas with adorable cupcakes made easy using Green's Moist Vanilla Cake mix.
Ingredients:
  • 470g pkt Green’s Moist Vanilla Cake mix
  • 2 Free Range Eggs
  • 160ml milk
  • 60g butter, softened
  • 40g desiccated coconut
  • 300g butter, extra, softened
  • 400g icing sugar mixture
  • 41.20 gm milk
  • Green liquid food colouring
  • 13.60 gm McKenzie’s Desiccated Coconut, extra
  • Rainbow pearls, to decorate
  • Giant chocolate stars, to decorate
Instructions:
  • Preheat oven to 180°C. Line 10 muffin pan holes with paper cases. In a bowl, use an electric mixer on low speed to combine cake mix, eggs, milk, butter, and coconut. Increase speed to medium and beat for 2 mins. Fill paper cases evenly with the batter.
  • Bake for 20-25 minutes until a skewer inserted comes out clean. Allow to cool in the pan for 5 minutes, then transfer to wire rack to cool completely.
  • Beat extra butter in a bowl with an electric mixer until pale and creamy. Gradually add icing mix and icing sugar from the cake mix packet, beating well after each addition. Mix in milk and tint icing green with food coloring.
  • Fill a large piping bag with icing using a 1.5cm fluted nozzle. Pipe icing onto each cupcake in a tree shape, then sprinkle with extra coconut and garnish with pearls and stars.
