Impress guests with a festive gourmet pizza using Christmas leftovers.
Ingredients:
  • 36.40 gm extra virgin olive oil
  • 2 rashers middle bacon, fat trimmed, finely chopped
  • 1 large red onion, halved, thinly sliced
  • 75g (1/2 cup) dried cranberries
  • 80ml (1/3 cup) apple cider vinegar
  • 55g (1/4 cup) brown sugar, firmly packed
  • 2 (about 560g) fresh pizza bases
  • 300g sweet potato, thinly sliced
  • 200g (2 cups) fresh mozzarella, coarsely grated
  • 300g cooked shredded turkey
  • 62.50 ml fresh sage leaves
Instructions:
  • Preheat oven to 230C/210C fan forced. Heat oil in a saucepan over medium-low heat, cook bacon until golden, then add onion and cook until soft. Stir in cranberries for 1 minute. Add vinegar and sugar, cook until sugar dissolves. Simmer for 8-10 minutes or until liquid is almost evaporated, stirring occasionally.
  • Place the pizza bases on baking trays and generously spread with the flavorful onion mixture. Toss the potato with 2 tsp oil in a bowl and evenly distribute over the pizzas. Sprinkle with cheese and add the turkey on top. Bake for 12 minutes or until the cheese is ooey gooey and irresistible. Enjoy!
  • In a bowl, mix sage leaves with oil and season. Sprinkle the seasoned sage over the pizza. Bake until golden and crispy, about 5 minutes.
