Christmas Turkey Quiche

Spicy turkey and jalapeno quiche, perfect for Christmas dinner or brunch!
Ingredients:
  • 2 tablespoons canola oil
  • 1 boneless turkey breast
  • 2 tablespoons butter
  • 1 (10 ounce) can sliced mushrooms, drained
  • 1 onion, finely chopped
  • 1 red jalapeno pepper, minced
  • 1 green jalapeno pepper, minced
  • 1.5 cups all-purpose flour, divided
  • 0.5 cup whole wheat pastry flour
  • 0.5 cup lard, chilled and cut into small pieces
  • 9 tablespoons iced water, or more as needed
  • 1 cup grated farmer's cheese
  • 3 eggs
  • 1 cup milk
Instructions:
  • In a saute pan over medium heat, warm the oil. Cook the turkey breast, turning occasionally, until golden brown on the outside and fully cooked in the center, approximately 15 minutes. Allow it to cool before using.
  • Heat your oven to 375 degrees F (190 degrees C).
  • In a clean saute pan over medium heat, melt butter. Add mushrooms, onion, and jalapeno peppers. Saute until onion is translucent, around 5 minutes.
  • In a bowl, mix 1 cup all-purpose flour, whole wheat flour, and salt. Incorporate the lard until mixture resembles crumbs. Gradually add spoonfuls of iced water, stirring with a fork until dough forms a ball.
  • Gently roll out the dough on a floured surface, shaping it into a 9-inch circle, then place it into a pie plate.
  • Place the crust in the preheated oven and bake until the edges turn a light golden brown, which should take about 10 minutes.
  • Spread a flavorful blend of onions and mushrooms over the crust, then generously layer farmer's cheese on top. Finally, cut the turkey breast into bite-sized chunks and scatter them over the cheese.
  • Combine the remaining 1/2 cup of all-purpose flour with eggs, milk, and baking powder, whisking until the mixture is smooth. Pour the mixture over the filling.
  • Bake for 35 to 40 minutes until the top is lightly browned and the crust bounces back when touched gently.
