Homemade chunky tomatillo salsa with fresh herbs and tangy onions, better than any restaurant's.
Ingredients:
  • 12 medium fresh tomatillos, husks removed
  • 1 cup water, or more as needed
  • 0.25 cup diced white onion
  • 3 cloves garlic, minced
  • 1 medium jalapeno pepper, stemmed and seeded, or more to taste
  • 0.5 teaspoon ground cumin
  • 0.25 teaspoon dried Mexican oregano
  • 1 teaspoon salt, or more to taste
  • 1 bunch fresh cilantro, stems removed
  • 1 medium onion, diced
Instructions:
  • In a deep-sided saucepan over medium heat, combine tomatillos, water, diced onion, garlic, jalapeno, cumin, and oregano. Bring to a simmer and cook until tomatillos are lightly browned on all sides, about 2 to 3 minutes. Add more water if necessary, ensuring there is only about 1/3 cup of water left when tomatillos are done.
  • Transfer the mixture to a blender off the heat. Season with salt and blend until smooth. Add cilantro and blend until thoroughly combined. Incorporate the rest of the diced onion and pulse to achieve a chunky texture.
  • Transfer the flavorful salsa into a chic serving dish and allow it to cool for 10 minutes before sharing with your eager guests.
