Spicy tomato herb fusilli pasta - perfect for a party!
Ingredients:
  • 1 package (16 oz) fusilli pasta
  • 1/4 cup olive or vegetable oil
  • 1 tablespoon capers
  • 3 cloves garlic, finely chopped
  • 2 cans (28 oz each) Muir Glen™ organic whole peeled tomatoes with basil, drained, chopped
  • 1 small red chile, seeded, chopped
  • 1/2 cup sliced imported Italian black olives
  • 1/2 cup sliced green olives
  • 1 tablespoon chopped fresh or 1 teaspoon dried oregano leaves
  • 1 tablespoon chopped fresh or 1 teaspoon dried basil leaves
  • Freshly ground pepper
Instructions:
  • Cook pasta in a 6-quart Dutch oven according to package instructions, then drain and set aside.
  • In a Dutch oven, heat aromatic garlic and briny capers in olive oil until fragrant and garlic turns golden. Add in juicy tomatoes and spicy chili, bringing to a boil. Simmer covered for 20 minutes, stirring occasionally, until flavors meld beautifully.
  • Combine the pasta, olives, oregano, and basil in the pot. Cover and let simmer for 10 minutes. Serve with freshly ground pepper.
