"Easy, no-bake church window cookies: Festive chocolate treats with coconut and colorful marshmallows for a stained glass effect."
Ingredients:
  • 0.5 cup butter
  • 2 cups semisweet chocolate chips
  • 1 (10.5 ounce) package rainbow colored miniature marshmallows
  • 1 (8 ounce) package flaked coconut
  • parchment paper
Instructions:
  • Prepare all ingredients.
  • Melt the butter in a heatproof bowl set over a saucepan of gently simmering water, making sure the bowl doesn't touch the water.
  • Stir in the chocolate chips until they are completely melted. Take the mixture off the heat and allow it to cool for 10 minutes at room temperature, giving it an occasional stir.
  • Gently fold marshmallows into melted chocolate until evenly coated.
  • Lay down two large pieces of parchment paper. Divide the chocolate-marshmallow mixture in half and form each half into a 12-inch long log in the center of each parchment using a rubber spatula.
  • Wrap the logs snugly in parchment paper and refrigerate them for 30 minutes to chill.
  • Lay two fresh 15x18-inch parchment paper sheets on the counter and sprinkle 1 cup of flaked coconut on each sheet. Gently move the chilled logs (they will be soft) onto the new parchment paper with coconut.
  • Coat logs with coconut, making sure to cover all sides by gently pressing.
  • Wrap the coated logs snugly in fresh parchment paper and refrigerate until they are firm, for at least 4 hours or overnight.
  • Slice the chilled mixture into 1/2-inch thick slices.
