Cilantro and Garlic Potatoes

Delicious Lebanese cilantro potatoes, perfect with poultry or beef.
Ingredients:
  • 1 quart oil for frying, or as needed
  • 4 large potatoes, cubed
  • 1 teaspoon vegetable oil
  • 2 cups chopped fresh cilantro
  • 4 cloves garlic, minced
  • 1 tablespoon fresh lemon juice
  • 0.5 teaspoon cumin
  • salt to taste
Instructions:
  • Preheat the deep fryer with 1 quart of oil to 375 degrees F (190 degrees C).
  • Deep-fry potatoes until golden and crispy, approximately 8 minutes. Place on paper towels to drain excess oil.
  • Heat 1 teaspoon oil in a large skillet over medium heat. Sauté cilantro and garlic for 5 minutes. Stir in drained potatoes, lemon juice, cumin, and salt until combined.
