Cilantro Chicken Salad

Poached chicken in flavorful broth & soy sauce, shredded & tossed with cilantro-lime dressing. Optional anchovy paste for extra umami. Enjoy in a wrap or over greens.
Ingredients:
  • 1 lime, zested and juiced
  • 2 tablespoons soy sauce
  • 1 (10.5 ounce) can chicken broth
  • 4 boneless, skinless chicken breast halves
  • 1 teaspoon anchovy paste
  • 0.5 teaspoon white sugar
  • 2 cloves garlic, minced
  • 3 tablespoons chopped fresh cilantro
  • 2 shallots, chopped
Instructions:
  • In a skillet over medium heat, combine lime peel, soy sauce, and chicken broth. Add chicken breasts and bring to a boil. Cover and simmer until chicken is cooked through. Remove from heat and let cool. Shred chicken and set aside.
  • Combine lime juice, olive oil, anchovy paste, sugar, salt, and pepper in a bowl. Mix in garlic, cilantro, shallots, and chicken until well combined.
