Easy homemade British honeycomb toffee, a beloved treat for all ages.
Ingredients:
  • butter
  • 2.5 cups white sugar
  • 0.75 cup golden syrup
  • 6 tablespoons water
  • 2 teaspoons vanilla extract
  • 1 tablespoon baking soda
Instructions:
  • Prepare the baking pan by greasing it and lining the bottom and sides with parchment paper, ensuring that the parchment extends at least 2 inches above the sides of the pan. Grease the parchment paper with butter.
  • In a deep, heavy-bottomed saucepan, mix sugar, golden syrup, water, and vanilla extract. Bring to a boil without stirring. Heat to 310 degrees F (155 degrees C) until syrup dropped in cold water forms hard threads, about 10 minutes. Use a wet pastry brush to clean any sugar crystals on the sides of the pan.
  • Off the heat, gently add baking soda and stir swiftly until the foam settles and the mixture becomes golden. Pour into the prepared baking pan promptly. Allow it to cool and set for approximately 15 minutes. Break into bite-size pieces before serving.
