Wholesome summer vegetable stir-fry paired with chicken over rice using only fresh ingredients.
Ingredients:
  • 1 tablespoon butter
  • 3 medium potatoes, peeled and cubed
  • 4 yellow squash, cubed
  • 4 fresh tomatoes, peeled and chopped
  • 1 medium onion, chopped
  • Salt and pepper to taste
Instructions:
  • In a skillet over medium heat, melt butter. Add in potatoes, squash, tomatoes, and onion. Season generously with salt and pepper. Cook, stirring occasionally, until tender, approximately 30 minutes.
