Pecan Pralines

Indulge in decadent pecan pralines - a perfect holiday treat for gifting or sharing.
Ingredients:
  • 2 cups pecan halves
  • 1 1/4 cup white sugar
  • 3/4 cup brown sugar, packed
  • 1/2 teaspoon baking soda
  • 3/4 cup light cream
  • Pinch salt (optional, omit if using salted butter)
  • 1 teaspoon brandy or vanilla (optional)
Instructions:
  • Enhance the pecans' flavor by toasting them (optional). Preheat the oven to 300°F. Spread pecan halves in a single layer on a baking sheet and toast for 10 minutes, flipping halfway through. Allow to cool.
  • Line 2 baking sheets with parchment paper or Silpat and get them ready.
  • Combine white and brown sugar, baking soda, and pinch of salt (if using unsalted butter) in a 3-quart saucepan. Pour in light cream and heat over medium to medium-high heat. Attach a candy thermometer to the side of the pan. Stir occasionally and cook until the mixture reaches 235°F on the candy thermometer, which should take about 25 minutes. Expect slight foaming and occasional bubbling as it cooks.
  • Once the temperature hits 235°F, incorporate the butter and stir until fully melted and well combined, about 1 minute.
  • Take the pan off the stove, then mix in the pecans and brandy or vanilla. Stir well until the pecans are thoroughly coated. Keep stirring for about 30 seconds to cool slightly.
  • Spoon mixture onto baking sheets and let cool for about 45 minutes until pralines lift easily. Store in an airtight container for three to five days.
