Cinnamon and cranberry muesli

Indulge in a nutritious muesli packed with fruits, bran, and seeds for a delightful breakfast.
Ingredients:
  • 140g (1 1/2 cups) rolled oats
  • 40g (1 cup) bran flakes
  • 60g (1/2 cup) bran cereal
  • 45g (1/4 cup) whole unroasted cashews
  • 50g (1/3 cup) craisins (Ocean Spray brand)
  • 40.00 ml pepitas (pumpkin seed kernels)
  • 40.00 ml sunflower seeds
  • 2.50 gm ground cinnamon
  • 60ml (1/4 cup) maple syrup
  • 20g reduced-fat dairy spread
  • Skim milk, to serve
  • Poached pineapple & strawberries (see related recipe), to serve
Instructions:
  • Preheat the oven to 200°C. Mix oats, bran flakes, bran cereal, cashews, craisins, pepitas, sunflower seeds, and cinnamon in a large bowl.
  • In a small saucepan over medium heat, combine maple syrup and dairy spread. Stir until the spread melts and the mixture is smooth, about 2 minutes. Drizzle over the oat mixture and mix well using a wooden spoon.
  • Transfer the oat mixture to a roasting pan and bake in a preheated oven, stirring every 5 minutes, until it turns a light brown color, approximately 20 minutes. Allow it to cool for 1 hour.
  • Divide the muesli into serving bowls and enjoy with skim milk, poached pineapple, and strawberries, if preferred.
