Create a quick and festive dessert with red berries on mini pavlovas.
Ingredients:
  • 1 x 425g can wild cranberries in syrup
  • 55g (1/4 cup) caster sugar
  • 1 x 7cm cinnamon stick
  • 1 x 300ml ctn double cream
  • 6 bought pavlova nests
Instructions:
  • Strain the cranberries and save the syrup. In a saucepan, mix the syrup, sugar, and cinnamon, then bring to a boil over medium heat. Lower the heat and simmer for 3-5 minutes until the syrup thickens. Take it off the heat and add the cranberries. Allow it to cool for 10 minutes.
  • In a spacious bowl, pour the cream and whisk it with a balloon whisk until soft peaks are formed.
  • Arrange the pavlova nests on serving plates, top with cream, spoon the cranberry mixture over them, and serve promptly.
