Quick and cozy apple dessert for winter nights. Ready in under 30 minutes.
Ingredients:
  • 1 lemon
  • 1kg (about 6) granny smith apples, peeled, quartered
  • 110g (1/2 cup) caster sugar
  • 40.00 gm water
  • 5.00 gm ground cinnamon
  • Pinch freshly grated or ground nutmeg
  • 80mls (1/3 cup) thin cream
Instructions:
  • Peel the lemon using a vegetable peeler, being sure to remove the white pith. Cut the rind into very thin strips. Alternatively, zest the lemon. Juice the lemon and set aside the juice.
  • In a saucepan, mix cored apples with caster sugar, 1 tablespoon of lemon juice, water, cinnamon, and nutmeg. Bring to a boil and simmer on low for 10 minutes. Stir in lemon rind strips and cook for an additional 5 minutes until apples are tender.
  • Whisk cream in a bowl until soft peaks form using electric beaters or a hand whisk. Serve warm apples with the whipped cream.
