Enhance pancake richness with applesauce, vanilla, cinnamon, and cooked brown rice.
Ingredients:
  • 0.5 cup cooked RiceSelect® Texmati® Brown Rice
  • 0.66666668653488 cup skim milk
  • 2 tablespoons unsweetened applesauce
  • 1 egg, slightly beaten
  • 0.5 tablespoon coconut oil, melted
  • 0.5 cup rice flour
  • 2 tablespoons coconut flour
  • 1 tablespoon stevia powder or sweetener of choice
  • 2 tablespoons powdered milk
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 0.25 cup dark brown sugar
  • 0.25 teaspoon ground cinnamon
Instructions:
  • In a medium bowl, mix together cooked rice, milk, applesauce, egg, coconut oil, and vanilla. Whisk until fully combined.
  • Mix the rest of the pancake ingredients into the brown rice mixture until thoroughly combined.
  • Preheat a generously oiled large nonstick skillet over medium heat. Pour 1/4 cup of batter for each pancake into the skillet.
  • Flip the food when the edges become golden and bubbles form on the surface, approximately after 2-3 minutes.
  • Continue cooking for an additional 1-2 minutes on the other side until golden brown.
  • Finish the pancakes by generously spooning the flavorful butter mixture and cooked apples on top for that extra touch of indulgence.
