Paleo Applesauce Pancakes

Nutty, gluten-free paleo pancakes with applesauce and cinnamon for a delicious and quick breakfast.
Ingredients:
  • 2 eggs
  • 0.33333334326744 cup applesauce
  • 0.5 teaspoon vanilla extract
  • 0.5 cup almond flour
  • 0.33333334326744 cup tapioca flour
  • 0.5 teaspoon ground cinnamon
  • 0.5 teaspoon baking soda
  • 1 pinch salt
  • 3 tablespoons water, or as needed
  • 1.5 teaspoons coconut oil, or as needed
Instructions:
  • Lightly whisk eggs in a large bowl, then blend in applesauce and vanilla extract until well combined.
  • In a separate bowl, mix together almond flour, tapioca flour, cinnamon, baking soda, and salt. Then, gently fold this mixture into the egg mixture until just combined. Adjust the batter thickness by gradually adding water. Let the batter rest for 15 minutes before cooking.
  • Heat coconut oil on a griddle over medium-high heat, then spoon batter onto it. Cook until bubbles form and edges are dry, about 3 to 4 minutes. Flip and brown the other side for 2 to 3 minutes. Repeat with remaining batter.
