Cinnamon applesauce cupcakes topped with cinnamon icing and chopped pecans - a delicious fall dessert.
Ingredients:
  • 1 (15.25 ounce) package yellow cake mix
  • 2 teaspoons ground cinnamon
  • 0.33333334326744 cup vegetable oil
  • 3 eggs
  • 1 cup Mott's® Natural Applesauce
  • 1 cup confectioners' sugar
  • 0.5 teaspoon ground cinnamon
  • 2 teaspoons milk, or as needed
  • Chopped pecans for garnish
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) or as directed on the cake mix package, and line 24 muffin cups with paper liners.
  • Combine cake mix with a fragrant touch of 2 teaspoons of cinnamon in a bowl. Follow the package instructions to create a luscious cake batter using vegetable oil and eggs.
  • Fill muffin cups 2/3 full. Bake as per package instructions (usually 18 to 21 minutes) or until a toothpick comes out clean when inserted into the center of a cupcake.
  • Take the muffin pans out of the oven and let them cool.
  • Hollow out the center of each cupcake, making a cavity about 1-1/2" long and 3/4" in diameter. Fill each cavity with approximately 2 teaspoons of applesauce, or enough to fill it completely.
  • Whisk confectioners' sugar, cinnamon, and milk until smooth and drizzle consistency. Adjust thickness by adding more sugar or milk. Drizzle over cupcake, sprinkle with chopped pecans, and let icing set before serving.
