Pork & apple sauce

Ingredients:
  • 2 green eating apples
  • 1cm piece of ginger
  • 150 g brown rice
  • 200 g small carrots
  • 200 g tenderstem broccoli
  • 220 g piece of lean higher-welfare pork fillet
  • 1 whole nutmeg for grating
  • 8 leaves of fresh sage
  • olive oil
  • 2 oranges
  • 2 tablespoons natural yogurt
Instructions:
  • 1. Quarter the apples, remove the cores, peel, and finely chop the ginger. Place both in a pan with 300ml of boiling water and boil vigorously for 10 minutes, stirring occasionally. Transfer the mixture to a blender and blend until smooth. 2. Cook the rice according to package instructions. Steam the carrots in a colander over the rice for 20 minutes with a lid on. Remove them and set aside. Steam the broccoli in the colander for the last 5 minutes, then drain the rice. 3. Season the pork with salt, black pepper, nutmeg, and sage. Heat oil in a large frying pan over medium heat, then cook the pork and carrots for about 4 minutes on each side until golden and cooked through. Let the pork rest on a board. 4. Lower the heat, squeeze orange juice over the carrots in the pan, and allow it to thicken into a glaze. Slice the pork and serve with rice, broccoli, and carrots. 5. Swirl half of the apple sauce with yoghurt (save the rest for later) and serve on the side with the meal. Drizzle with pan drippings and juices before enjoying your delicious dish.
