Delectable pulled pork taco with a unique twist.
Ingredients:
  • 1 large corn cob
  • 4 soft flour tortillas
  • 120g red cabbage, finely shredded
  • 62.50 ml fresh coriander leaves
  • 80ml (1/3 cup) apple sauce
  • 500g pork belly, fat-trimmed
  • 9.20 gm extra virgin olive oil
  • 1 brown onion, thinly sliced
  • 2 garlic cloves, smashed
  • 500ml (2 cups) vegetable stock
Instructions:
  • Preheat your oven to 180C/160C fan-forced. Season the pork. In a flameproof casserole dish, heat oil over medium-high heat. Sauté onion and garlic until browned, about 5 minutes. Place pork on top of the mixture, pour in stock, bring to a boil, then cover and roast for 1½ hours until meat is tender and shreds easily with a fork.
  • Heat up a chargrill pan on medium-high. Grill the corn, turning occasionally, for about 5 minutes until lightly charred. Remove kernels from the cob. Grill the tortillas for about 1 minute on each side until lightly charred. Set aside, cover to keep warm.
  • Place the pork on a board and save the cooking liquid. Remove the rind and excess fat. Use 2 forks to shred the meat. Add desired amount of cooking liquid to moisten the meat.
  • Arrange a layer of shredded cabbage, seasoned pork, fresh coriander, and corn over the tortillas. Add a dollop of apple sauce on top before serving. Finally, season to taste.
